Microwave ginger biscuits

Ingredients:

  • 90g oat or rice flour

  • 60g protein powder (flavor of your choice)

  • 5g teaspoon baking powder

  • Good pinch of salt

  • 25g chopped stem ginger

  • 15ml honey or maple syrup

  • 40ml milk (dairy or plant-based)

  • 5g ginger paste

  • 2 tablespoons melted coconut oil or butter

Instructions:

  • In a medium-sized bowl, stir together the oat flour, protein powder, baking powder, salt and stem ginger until well combined.

  • In a separate small bowl, mix together the honey or maple syrup, milk, ginger paste and melted coconut oil or butter.

  • Pour the wet ingredients into the dry ingredients and stir until combined. Add a tiny amount of water if need just to help the mixture to hold a shape.

  • Divide the dough into 4 or 6 equal portions and shape each portion into a biscuit shape using your hands.

  • Place the biscuits on a microwave-safe plate or a microwave-safe dish lined with parchment paper.

  • If desired, lightly brush the tops of the biscuits with a little milk to help them brown.

  • Microwave the biscuits on high for about 1 minute and 30 seconds to 2 minutes, or until they are cooked through and no longer doughy in the center. The cooking time may vary depending on the wattage of your microwave, so keep an eye on them.

  • Remove the biscuits from the microwave and let them cool for a few minutes before serving.

  • These microwave biscuits are best enjoyed fresh. They can be served plain, or you can add your favorite spreads or toppings, such as butter, jam, or nut butter. Enjoy your homemade oat flour and protein powder biscuits
